Middle Eastern Cauliflower “Tabbouleh”
Ingredients
- 1/2 head of cauliflower
- 1 cucumber
- 1 red onion
- 1/2 cup cashews
- 3/4 cup dried apricots
- 1 cup cherry tomatoes
- 1/2 cup olive oil
- 2 Tablespoons lemon juice
- 1 handful of chopped mint
- 1 handful of chopped parsley
- 1 handful of chopped cilantro
- Salt and pepper to taste
Instructions
- Put the cauliflower in a food processor and blend until finely chopped. Dice the cucumber, onion, cashews, and apricots. Slice the tomatoes into half. Mix all the ingredients together in a bowl.
- Mix olive oil and lemon together and toss with vegetables along with fresh herbs, salt and pepper to taste.
Notes
This is very similar to the classic bulgur salad.
