Ingredients
- One cup dry quinoa
- One cup black beans
- One cup corn-frozen and thawed or cut off the cob
- One medium baked sweet potato, cooled and diced
- Handful of grape or cherry tomatoes, cut in half
- One diced yellow and/or orange pepper
- 1/2 cup chopped cilantro
- 1/2 cup pine nuts of pumpkin seeds
- One avocado, diced and added at the end
- 1/2 cup chopped mango
Dressing:
- Juice of two limes(or more to taste)
- 1/2-1/3 cup olive oil
- 3/4 teaspoon sea salt
- 1/4 teaspoon or more of pepper
- dash or two of cayenne
Instructions
- Cook quinoa in 2 cups water for 20 minutes. Cool
- Chop vegetables and add to quinoa
- Make dressing and add to remaining ingredients
- Sprinkle with cayenne
