Watermelon is refreshing, sweet and nutritious. Enjoy this salad with my vegan tacos for Taco Tuesday!
Watermelon Salad
Ingredients
- 6 tablespoons lime juice
- 4 tablespoons olive or avocado oil
- 1/2 teaspoon lime zest
- 4 cups seedless watermelon, cut into 1/2-inch cubes
- 1 jalapeño pepper, seeded and finely chopped
- 1/2 cup basil, cut into thin strips
- 2 teaspoons black sesame seeds
- 1/2-1 teaspoon sea salt
Instructions
- Whisk together lime juice, oil, jalapeño and lime zest.
- Place watermelon cubes in single layer in large shallow dish.
- Pour lime juice mixture over watermelon, and gently toss to combine. Cover, and refrigerate until ready to serve. I like to let it marinade for a couple of hours.
- Sprinkle with basil, sesame seeds and salt, and serve.
